This is a recipe for a healthy Chinese chicken salad with Asian-influenced flavors, perfect for any occasion.
Ingredients
4 cups thinly sliced Napa or green cabbage
2 cups thinly sliced red cabbage
1 cup shredded or matchstick carrots
2 cups precooked and shredded or cubed chicken
1/2 cup sliced green onions
1/4 cup toasted sliced almonds
1 cup drained mandarin oranges in water
1/4 cup cilantro
3/4 cup won ton strips or chow mein noodles
2 tablespoons sesame seeds
Dressing:
1/4 cup soy sauce
1/4 cup rice wine vinegar
2 tablespoons toasted sesame oil
2 cloves crushed garlic
2 teaspoons freshly minced ginger
1 teaspoon sugar
1 teaspoon pepper
Instructions
Wash and chop the Napa cabbage, thinly slice the red cabbage, and shred the carrots. Add them to a serving bowl.
Shred the cooked chicken and slice the green onions. Add them to the bowl.
Slightly toast the almonds and add them to the bowl with the drained mandarin oranges.
Add cilantro to the bowl, if desired.
To make the dressing, add all dressing ingredients to a sealable container and shake well.
Pour the dressing over the salad and toss well to combine.
Top with wonton strips and sesame seeds.
