Description

Indulge in the ultimate romantic dessert with these easy-to-make chocolate-covered strawberries. Perfect for Valentine’s Day, anniversaries, or any occasion where you want to impress someone special.

Ingredients

Scale
  • 2 pounds strawberries , fresh, stem attached (900g)
  • 12 ounces dark chocolate (or bittersweet, semi-sweet, milk chocolate) (340g)
  • 10 ounces white chocolate or white candy melts (284g)

Instructions

Step 1: Prepare Your Strawberries

  1. Wash the strawberries : Rinse the strawberries thoroughly under cold running water to remove dirt and debris. Avoid removing the stems yet, as they help prevent juice loss during preparation.
  2. Pat them dry : Use a clean kitchen towel or paper towels to gently pat the strawberries completely dry. Any moisture left on the surface can cause the chocolate to seize when dipping.

Step 2: Melt the Chocolate

  1. Double boiler method : Place chopped chocolate in a heatproof bowl set over a pot of simmering water (ensure the bowl doesn’t touch the water). Stir occasionally until fully melted and smooth.
  2. Microwave method : Microwave the chocolate at 50% power in 30-second intervals, stirring between each interval, until completely melted and glossy.
    • Tip : If using white chocolate or candy melts, keep an eye on them closely, as they burn easily even in the microwave or double boiler.

Step 3: Dip the Strawberries

  1. Prepare your workspace : Line a baking sheet with parchment paper for easy cleanup and transfer the melted chocolate into a small, deep bowl or cup that allows for easy dipping.
  2. Dip the strawberries : Hold each strawberry by the stem and carefully dip it into the melted chocolate, ensuring the berry is coated evenly while leaving a small portion near the top uncovered if desired.
  3. Tap off excess : Gently tap the strawberry against the side of the bowl to remove any drips, then place it onto the prepared baking sheet.

Step 4: Decorate Your Strawberries

  1. Drizzle design : Transfer leftover chocolate to a piping bag or resealable plastic bag with a corner snipped off. Drizzle contrasting colors over the dipped strawberries for a decorative touch.
  2. Tuxedo style : For tuxedo strawberries, dip half of the strawberry in white chocolate after coating it in dark chocolate. Use a toothpick dipped in chocolate to add details like buttons and bowties.

Step 5: Set the Chocolate

  1. Room temperature setting : Allow the strawberries to harden at room temperature for about 15–20 minutes.
  2. Refrigeration option : Speed up the process by placing the baking sheet in the refrigerator for 10–15 minutes. Be cautious not to leave them too long, as condensation may form and affect the appearance.

Notes

Keep everything warm : Work in a warm environment to prevent the chocolate from setting too quickly, which can make dipping difficult.

Avoid seizing : Ensure all utensils and surfaces are completely dry before handling melted chocolate, as even a drop of water can cause it to seize.

Thinning the chocolate : If the chocolate becomes too thick, mix in up to 2 teaspoons of coconut oil or vegetable shortening per batch for a smoother consistency.

Presentation matters : Leave the stems intact for a beautiful presentation and easier handling during dipping.
