4 pounds of chicken wings

2 teaspoons of garlic powder

2 teaspoons of paprika (smoked or regular)

2 teaspoons of ground pepper

1 teaspoon of salt

1 tablespoon of baking powder

Baking spray

A quarter cup of butter

Additional salt and spices to taste


Instructions

  1. Preheat your oven to 425°F (220°C) and grease a rimmed baking sheet with baking spray.
  2. In a large bowl, mix together garlic powder, paprika, ground pepper, salt, and baking powder. This will be the spice rub for your chicken wings.
  3. Break down the chicken wings into drumettes and wingettes, discarding the wing tips. You can keep the wing tips for making chicken stock later if you wish.
  4. Pat the chicken pieces dry using paper towels. This helps to achieve a crispy finish.
  5. Reserve a spoonful of the spice rub, then add the chicken pieces to the bowl with the rest of the spice mix. Toss the chicken to evenly coat them in the rub.
  6. Spread the chicken pieces on the prepared baking sheet, ensuring they are not overcrowded to allow for proper crisping.
  7. Bake in the preheated oven for about 20 minutes. If you have larger wings, they might need a bit longer. The internal temperature should reach 165°F (74°C).
  8. For an extra crispy finish, broil the chicken wings for 2-3 minutes after they’ve finished baking.
  9. While the chicken wings are in the oven, melt the butter in a microwave on half power.
  10. Once the wings are done, transfer them into a large bowl. Pour any pan drippings into the melted butter and mix well.
  11. Drizzle the butter mixture over the wings and toss to coat evenly. Season with additional salt and spices if needed.
  12. Serve your delicious baked chicken wings as they are, or with a side of your favorite dipping sauce like ranch or blue cheese.
