2 pounds American catfish
15g or 1.5Tbsp salt
Neutral oil for frying
For the Hush Puppies:
65g all-purpose flour
150g medium to fine grind cornmeal
8g salt
10g baking powder
10g sugar
2g cayenne pepper
75g diced onion
25g melted butter
1 large egg
200g buttermilk
Instructions
- Thaw the catfish and cut into two halves on a bias. Salt the fish and let it cure for 20 minutes.
- In a medium bowl, whisk together the flour, cornmeal, salt, baking powder, sugar, and cayenne pepper.
- Add the diced onion, melted butter, egg, and buttermilk to the dry ingredients and mix until you have a batter that looks like wet spackle.
- Heat neutral oil to 350°F in a pot to fry the hush puppies. Using a small ice cream scoop or spoon, drop the batter into the hot oil and fry for about 2 1/2 minutes, flipping halfway through. Remove the hush puppies with a slotted spoon and place them on a paper towel-lined plate.
- Mix together a flour and cornmeal mixture for dredging the catfish.
- Heat two to three quarts of neutral oil in a heavy-bottom pot over medium-high heat. Dredge the catfish in the flour and cornmeal mixture, shaking off any excess. Fry the catfish in the oil for about 4 to 6 minutes, depending on the thickness of the fillets. Remove the catfish from the oil and let any excessive oil drip off.
- Serve the fried catfish hot with the hush puppies on the side.
