4 garlic cloves, minced
½ teaspoon red pepper flakes
1 ½ cups uncooked long grain white rice, rinsed
1 bay leaf
1 (15-ounce can) crushed tomatoes
3 cups low-sodium chicken broth
1 pound large shrimp (in the 16–20 count range), peeled and deveined

Instructions
- In a small bowl, combine paprika, kosher salt, garlic powder, onion powder, dried oregano, dried thyme, cayenne pepper, and black pepper to make the Cajun seasoning.
- In a large Dutch oven or stockpot, heat two tablespoons of olive oil over medium-high heat.
- Add the chicken to the pot and season with one tablespoon of the Cajun seasoning. Saute until lightly golden and cooked through. Remove from the pot and set aside.
- Add the sliced sausage to the same pot and cook until browned on both sides. Remove from the pot and set aside.
- Add the chopped celery, bell peppers, onion, and garlic to the pot. Saute for 4-5 minutes or until the veggies have softened.
- Add the remaining Cajun seasoning and stir to combine.
- Add the rice and stir to coat with the vegetable mixture.
- Add the chicken broth and bring the mixture to a boil.
- Add the cooked chicken and sausage back to the pot and stir to combine.
- Reduce heat to low, cover the pot, and let simmer for 20 minutes.
- Add the shrimp to the pot and stir to combine. Cover the pot again and let simmer for an additional 5-10 minutes or until the shrimp is pink and cooked through.
- Season with salt and black pepper to taste.
