  • 1 lb extra-lean ground beef
  • 1 yellow onion, diced
  • 1 tablespoon olive oil
  • 2 cups grated cheddar cheese, divided
  • 1 lb dried macaroni pasta
  • 1 tablespoon chili powder
  • 1 tablespoon cumin
  • 1 green pepper, diced
  • 1 can kidney beans, rinsed and drained
  • 4 cloves garlic, minced
  • 4 celery stalks, chopped
  • ½ tablespoon each of salt & pepper
  • 3 cups of beef broth
  • 1 can diced tomatoes (796ml)

Instructions

  1. Put olive oil in the instant pot and set the pot on sauté mode. Saute the ground beef for 5 minutes until it’s browned.
  2. Turn off saute mode and put the onion, celery, garlic, chili powder, cumin, salt & pepper, diced tomatoes, kidney beans, beef broth, and the pasta in the instant pot.
  3. On high pressure, cook for 5 minutes and do a quick pressure release.
  4. Remove the lid and stir in 1 cup of cheese and green pepper.
  5. In large bowls, serve the chili mac and top it with the rest of the cheese.
