Water, for boiling
1 Onion
3 tbsp Olive Oil
1 Green Bell Pepper
3 cloves of Garlic
30g Butter
1 Carrot
1 Tomato
Salt, to taste
Black Pepper, to taste
Fresh Parsley, for garnish
Parmesan Cheese, for garnish
Instructions
- Begin by boiling the potatoes in a pot of water until they are tender. This not only softens them but also allows them to absorb flavors better.
- While the potatoes are boiling, chop up the onion and green bell pepper, and fry them in a pan with the olive oil.
- Add the minced garlic to the pan, followed by the butter.
- Peel and grate a carrot directly into the pan, frying the mixture for 2-3 minutes.
- Add sliced tomatoes to the pan with the onions and bell peppers, stirring them in to add a delightful tanginess to the mix.
- Season the mixture with a sprinkle of salt and black pepper.
- When the potatoes are done boiling, drain them, cut them in half, and add them to a larger pan with olive oil and butter.
- Season the potatoes with salt and black pepper, and let them crisp up.
- Prepare the garnish by finely chopping fresh parsley and grating some parmesan cheese.
- Arrange the crispy potatoes on a plate, garnish with the parsley and cheese, and serve with the tomato sauce.
