Ingredients

1 kg or 2.2 lbs of Potatoes

Water, for boiling

1 Onion

3 tbsp Olive Oil

1 Green Bell Pepper

3 cloves of Garlic

30g Butter

1 Carrot

1 Tomato

Salt, to taste

Black Pepper, to taste

Fresh Parsley, for garnish

Parmesan Cheese, for garnish


Instructions

  1. Begin by boiling the potatoes in a pot of water until they are tender. This not only softens them but also allows them to absorb flavors better.
  2. While the potatoes are boiling, chop up the onion and green bell pepper, and fry them in a pan with the olive oil.
  3. Add the minced garlic to the pan, followed by the butter.
  4. Peel and grate a carrot directly into the pan, frying the mixture for 2-3 minutes.
  5. Add sliced tomatoes to the pan with the onions and bell peppers, stirring them in to add a delightful tanginess to the mix.
  6. Season the mixture with a sprinkle of salt and black pepper.
  7. When the potatoes are done boiling, drain them, cut them in half, and add them to a larger pan with olive oil and butter.
  8. Season the potatoes with salt and black pepper, and let them crisp up.
  9. Prepare the garnish by finely chopping fresh parsley and grating some parmesan cheese.
  10. Arrange the crispy potatoes on a plate, garnish with the parsley and cheese, and serve with the tomato sauce.
