Super Delicious Szechuan Chicken Recipe

Description

Making this dish requires preparing the ingredients in advance because some of them are not common. We will provide with the list of ingredients to make Szechuan chicken below.


Ingredients

  • 1 lbs Boneless chicken thighs or chicken breasts
  • ½ cup of canola oil
  • Soy sauce
  • 1 table-spoon of Fresh ginger, peeled and minced
  • 1 table-spoon of Fresh Garlic – minced
  • Dried red chilis – 5-40 cayenne peppers
  • Cornstarch
  • Chinese cooking wine
  • 3 table-spoons of Szechuan peppercorns
  • ½ table-spoon of salt to taste

Instructions

Before anything you need a large nonstick skillet in order to get crispy chicken.

  1. Whisk the soy sauce, rice wine, and cornstarch in a medium bowl until combined.
  2. Put the chicken pieces in the bowl and leave it for 15 minutes so that the sauce gets mixed with the chicken
  3. Prepare a paper-towel-lined plate aside for later
  4. Over a medium-high heat place, a large skillet then adds the oil. When the oil is shimmering hot, add the chicken pieces. 
  5. Keep turning the chicken occasionally with a slotted spoon for two minutes 
  6. When the chicken becomes golden and crispy, remove it to a prepared plate and reduce the heat to medium
  7. From the skillet, remove oil excess, and add garlic, ginger, Szechuan peppercorns, and dried chilis
  8. Fry the mixture for one minute then add the cooked chicken
  9. Toss everything until it’s combined and remove from the heat
  10. The last step is garnishing with minced green onion if you like to

Notes

The most important ingredient is Szechuan peppercorns, because you can’t have the szechuan flavor without this. You can find Szechuan peppercorns in most Asian grocery stores, or order them online.

It’s recommended to get dried red chilis with bright color like cayenne peppers or chiles de árbol. Avoid dark red chilis, because the dark color is a sign of excess in storage time which may cause some bad effects on your health.
