Ingredients

Scale
  • 1/2 cup of Extra Virgin Olive Oil
  • 5 Cloves of Garlic, sliced
  • Pinch of Hot Pepper Flakes
  • 2 Tbsp of Pine Nuts
  • 2 Tbsp of Freshly Chopped Parsley
  • 1 Pound of Spaghetti

Instructions

  1. Fill a pot with water and set it on high heat until it boils. Add salt to the water and then add the spaghetti. Cook the pasta according to the package instructions.
  2. While the pasta cooks, heat up a good amount of olive oil in a large pan. Add some garlic to the pan, making sure to use enough oil so that the garlic is infused with its flavor. You may add pepper flakes to the oil if you like a little heat.
  3. Add some pine nuts to the pan when the garlic is halfway cooked through. Toast the pine nuts quickly since they cook a lot faster than garlic. If you don’t have pine nuts, don’t worry about it. You can still make a delicious meal.
  4. For a delicious variation, you can add olives and raisins to your meal. This is how the writer’s Nona makes her spaghetti olio. However, you can still make a delicious meal without these ingredients.
  5. Once the pasta is cooked, drain it and add it to the pan. Toss the pasta and the sauce together, making sure that the sauce is distributed evenly.
  6. Grate some parmesan cheese over the top and sprinkle some chopped parsley over it.
  7. Serve and enjoy!
