Description

Breakfast casualitas are a flavorful and delicious way to start your day. This recipe combines crispy tortilla shells with a hearty filling of papas con chorizo and huevo, topped with pico de gallo, avocado, and queso fresco.


Ingredients

Scale

12 small corn tortillas

Oil for frying

Salt

4 medium-sized potatoes, peeled and diced

8 oz chorizo, casing removed

1 Roma tomato, diced

1 Serrano pepper, diced

1/4 white onion, diced

9 eggs, beaten

Refried beans

Pico de gallo

Avocado, diced

Queso fresco, crumbled


Instructions

Make the Casualita Shells:

Heat oil in a pot on medium heat.

Once hot, place a tortilla on a spoon and dip it in the oil.

Press the tortilla down and hold it for about 10 seconds until it holds its shape.

Drain as much oil as possible and sprinkle a little salt on it.

Repeat until all tortillas are shaped.

Make the Papas Con Chorizo and Huevo Filling:

Heat oil in a pan on medium heat.

Add diced potatoes and season with salt, black pepper, and garlic salt. Cook for about five minutes, stirring constantly.

Move the potatoes to one side of the pan and add chorizo. Cook for about three minutes.

Add diced tomato, Serrano pepper, and white onion. Mix everything together and cook for a few more minutes.

Add beaten eggs and mix everything together. Cook until the eggs are fully done.

Put it All Together:

Take a shell and add some refried beans to the bottom.

Top it with the egg mixture.

Add pico de gallo with avocado and queso fresco.

Repeat until all casualitas are assembled.
