1 small onion, chopped
3 cups shredded cheddar cheese
1/2 cup melted butter
2 cups sour cream
1 can (10.5 oz) cream of chicken soup
1 tsp kosher sea salt
1 tsp freshly cracked black pepper
2 cups frozen hash browns

Instructions
- Preheat oven to 350°F (175°C).
- Melt butter and pour into a casserole dish, swirling to coat.
- In a large bowl, combine sour cream, cream of chicken soup, chopped onion, salt, pepper, and 2 cups of shredded cheddar cheese. Mix well.
- Add frozen hash browns to the mixture and fold in until well coated.
- Spoon mixture into the casserole dish in an even layer.
- Sprinkle remaining 1 cup of shredded cheddar cheese on top.
- Bake in preheated oven for 45-50 minutes or until golden and bubbly.
- Allow to cool for at least 15 minutes before serving.
