1 pint cherry tomatoes, halved

1 large English cucumber or 3 small garden cucumbers, quartered and sliced

1 large avocado, diced

8 ounces (1 cup) fresh mozzarella pearls

Fresh basil leaves, chiffonade cut

3 tablespoons extra virgin olive oil

1 tablespoon balsamic vinegar

1/2 teaspoon salt

1/4 teaspoon black pepper

1 garlic clove, crushed or finely chopped


  1. Slice the cherry tomatoes in half using a serrated knife. Place them in a mixing bowl.
  2. Add the sliced cucumbers to the bowl.
  3. Cut the avocado in half, remove the pit, and dice the flesh. Add the diced avocado to the bowl.
  4. Incorporate the mozzarella pearls into the salad.
