1 cup buttermilk

Instructions

  1. Preheat the oven to 375 degrees Fahrenheit. Prepare a larger square or rectangular casserole pan.
  2. Slice the peaches into thin slices and place them in the casserole pan.
  3. Add lemon juice, vanilla extract, white granulated sugar, ground cinnamon, all-purpose flour, cornstarch, and sea salt to the peaches. Mix well.
  4. Place cubes of unsalted butter over the peach filling.
  5. In a food processor, combine all-purpose flour, white granulated sugar, baking soda, baking powder, sea salt, and chilled, cubed unsalted butter. Pulse until fine crumbles form.
  6. Add buttermilk and vanilla extract to the food processor. Pulse until a thick biscuit batter forms.
  7. Spoon the biscuit batter on top of the peaches in the casserole pan.
  8. Sprinkle sugar over the biscuit batter.
  9. Bake in the preheated oven for 40 to 45 minutes, or until the biscuits are golden brown and cooked through.
  10. After 25 minutes, cover the cobbler with foil to prevent excessive browning of the biscuits.
  11. Remove the cobbler from the oven and let it cool on a wire rack for 20 to 30 minutes.
  12. Serve the peach cobbler while still warm, accompanied by a scoop of vanilla ice cream.
