  • 2 tbsp oil, divided
  • 1 lime, juice
  • 2 chipotle peppers in adobo sauce, finely chopped
  • 2 tbsp honey
  • 1 garlic clove, minced
  • 1/2 tsp salt
  • 6 boneless skinless chicken thighs
  • 2 cups cooked brown rice
  • 1 15-oz can black beans, drained and rinsed
  • 1 cup corn kernels
  • 1/2 cup pico de gallo
  • 1/2 cup guacamole
  • 1/4 cup fresh cilantro leaves

Instructions

  1. In a bowl, mix together oil, lime juice, minced Chipotle pepper in Adobo sauce, honey, minced garlic, and salt. Pour marinade over chicken thighs and marinate for 20-30 minutes in the fridge.
  2. In a large non-stick ceramic skillet, add a little bit of oil and let it heat up. Add the marinated chicken to the pan and let it cook for about 5-6 minutes until it’s brown. Flip the chicken over and let it cook for an additional 3-5 minutes or until it reaches a safe internal temperature of 165 degrees Fahrenheit.
  3. Assemble the bowl by starting with a bed of rice at the bottom of the bowl, followed by the cooked chicken on top. Add your favorite toppings such as black beans, corn, chopped tomatoes, avocado, and cilantro. Finish it off with a drizzle of sour cream or hot sauce.
