- 2 tbsp oil, divided
- 1 lime, juice
- 2 chipotle peppers in adobo sauce, finely chopped
- 2 tbsp honey
- 1 garlic clove, minced
- 1/2 tsp salt
- 6 boneless skinless chicken thighs
- 2 cups cooked brown rice
- 1 15-oz can black beans, drained and rinsed
- 1 cup corn kernels
- 1/2 cup pico de gallo
- 1/2 cup guacamole
- 1/4 cup fresh cilantro leaves
- In a bowl, mix together oil, lime juice, minced Chipotle pepper in Adobo sauce, honey, minced garlic, and salt. Pour marinade over chicken thighs and marinate for 20-30 minutes in the fridge.
- In a large non-stick ceramic skillet, add a little bit of oil and let it heat up. Add the marinated chicken to the pan and let it cook for about 5-6 minutes until it’s brown. Flip the chicken over and let it cook for an additional 3-5 minutes or until it reaches a safe internal temperature of 165 degrees Fahrenheit.
