Ingredients

  • 2 lbs of chicken drumsticks
  • 3 tbsp extra virgin olive oil
  • 1 tbsp garlic and herb seasoning
  • 1 tsp Slap Ya Mama seasoning
  • Salt to taste
  • 1 bell pepper, cut into large chunks
  • 1 onion, chopped
  • 4 potatoes, peeled and cut into large chunks
  • 1 tomato, chopped
  • 1 cup chicken stock
  • 1 lb green beans

Instructions

  1. In a shallow Dutch oven, heat the olive oil over medium heat. Season the chicken with garlic and herb seasoning, Slap Ya Mama seasoning, and salt. Roll the chicken in the seasoning and set aside.
  2. Once the skillet is hot, add the chicken and cook until browned on both sides, about 5 minutes per side.
  3. Add the bell pepper and onion to the skillet and sauté until tender, about 5-6 minutes.
  4. Add the potatoes to the skillet, followed by the chopped tomato. Add enough chicken stock to come about halfway up the sides of the skillet. Bring to a simmer, then cover and cook for 30 minutes, stirring occasionally.
  5. Add the green beans to the skillet and cook for an additional 10 minutes.
