How To Make One-Pan Italian Chicken and Potatoes:

Preparing the Chicken and Vegetables

The first step in making one-pan chicken and vegetables is to gather all of the necessary ingredients. You will need chicken, peppers, potatoes, green beans, garlic and herb seasoning, slap your mama seasoning, extra virgin olive oil, and some stock. You can also add other vegetables, such as zucchini or eggplant, depending on what’s available or what you prefer.

To prepare the chicken, you can use any part of the chicken, but in this recipe, drumsticks are used. Remove the skin from the drumsticks, as leaving it on will make it soggy rather than crispy. Season the chicken with garlic and herb seasoning, and add a little bit of slap your mama seasoning for some heat. Use tongs to turn the chicken in the seasoning and set it aside.

In a shallow Dutch oven or skillet, add some extra virgin olive oil, and heat it over medium heat. Once hot, add the seasoned chicken and cook it until it develops some color. Then, add in some chopped peppers and onions, and sauté them until they become tender. This should take around five to six minutes. Don’t worry if some of the spices get toasted too much; it will still taste great.

Adding Potatoes, Tomatoes, and Stock

Next, add in some chopped potatoes, making sure they are cut into large chunks. The potatoes will be a substantial part of the meal, so it’s important to make them sizeable. You can also add some chopped tomatoes, a can of tomato sauce, or a little bit of white or red wine. Then, add in some stock, making sure that there is enough liquid to come up about halfway up the sides of the pan.

The green beans should be added last so that they don’t cook too much. Once the green beans are nestled into the broth, partially cover the pan with a lid and let it simmer on medium-low heat for 45 minutes to an hour, or until the potatoes are tender.

Optional Additions and Serving

If you want to add other vegetables, like zucchini or eggplant, this is the time to do it. Just make sure they are cut into large chunks and cook them until they are tender.

Once the potatoes are tender, the meal is ready to be served. This one-pan chicken and vegetables recipe is perfect for a family meal or a casual dinner party. It’s easy to make, and you can modify it to include any vegetables you have on hand. Serve it with a side of bread or rice, and you have a complete and satisfying meal.
